Healthy Caesar Dressing

What’s the best part of any salad (aside from the crunchy bits, of course)? The dressing! This Healthy Caesar Dressing will lighten up your next Caesar salad but won’t compromise on flavor. It uses an unconventional ingredient — pickle juice. Yes, you read that right. The pickle juice gives a salty and acidic twist to your usual Caesar dressing. If you’re not into pickles, just substitute more lemon juice. And no, this recipe doesn’t use anchovies, but you could easily add them.

You will definitely want to add a Caesar salad with this Healthy Caesar Dressing to your weekly rotation. Whether you throw chicken on top to make it a meal or go for a little soup and salad action with my Butternut Squash Soup, be sure to save this recipe for a quick and easy dinner.

Makes about 3/4 cup

Ingredients
1 clove garlic
1/2 cup Greek yogurt
1 teaspoon Dijon mustard
1 teaspoon Worcestershire
2 tablespoons lemon juice (about 1 lemon)
2 tablespoons dill pickle juice
1/4 cup freshly grated Parmesan
Black pepper, to taste
2 tablespoons extra virgin olive oil

Directions
1. Mince garlic in a small food processor.
2. Add yogurt, Dijon, Worcestershire, lemon juice, pickle juice, Parmesan, and black pepper to food processor. Mix until combined.
3. Stream in olive oil and process until emulsified.
