Peanut Butter Banana Smoothie

There’s nothing better to kick-start a great day than a healthy, filling smoothie. This Peanut Butter Banana Smoothie is my favorite quick breakfast on the mornings when I’m feeling a little more ambitious than Honey Nut Cheerios. It’s creamy and nutty and gets a dose of fiber from flax seed. It’s also a good way to use up bananas that are on their way out. Just cut them up and toss them in the freezer until ready to use.

To bump this Peanut Butter Banana Smoothie up a notch, consider making it with my Homemade Cinnamon Peanut Butter. Note: you may want to leave the cinnamon out of this recipe since the homemade peanut butter already uses cinnamon. If you’re a coffee drinker, cold coffee would be a phenomenal addition to this smoothie. That’s what’s so awesome about smoothies — they’re versatile, so you can flavor to your heart’s desire. Every once in a while I’ll even throw in a few chocolate chips (because who doesn’t need chocolate at 7 in the morning?).

Makes about 16 ounces

Ingredients
1 cup frozen banana (about 1 banana)
1/2 cup peanut butter
1/2 cup Greek yogurt
1/2 cup almond milk
1 tablespoon honey
2 tablespoons ground flax seed
1/4 teaspoon cinnamon
1/8 teaspoon vanilla extract

Directions
1. Add all ingredient to a high-powered blender or food processor. Blend on high until smooth. If too thick, add more milk and pulse until combined.
2. Enjoy immediately.
