Turkey Sweet Potato Skillet

I’ve been making this Turkey Sweet Potato Skillet, or some version of it, for several years. But the game changed when I started adding fried eggs on top. You can’t beat a meal with a built-in sauce! Especially when that meal is healthy, simple, and delicious.

This recipe is easy to adapt to your preferences. Don’t like ground turkey? Pork or beef work great! Not a fan of bell pepper? Leave it out or substitute mushrooms or zucchini. You can turn my Turkey Sweet Potato Skillet into anything you want it to be. I won’t be offended.

Makes about 4 servings

Ingredients
1 pound ground turkey
1/2 medium onion, diced
3 large sweet potatoes, peeled and diced (about 6 cups)
1 orange bell pepper, chopped
2 cups baby spinach
1 cup shredded mozzarella
1 tablespoon + 1 teaspoon garlic powder
1 1/4 teaspoon dried thyme
1 teaspoon dried parsley
3/4 teaspoon salt
1/2 teaspoon pepper
3 tablespoons olive oil
4 eggs
Crushed red pepper (optional)

Directions
1. Preheat oven to 400 degrees.
2. Heat an oven-safe skillet on the stove over medium heat. Saute onion in about 1 tablespoon olive oil until softened. Add turkey and season with 1 teaspoon garlic powder, 1/4 teaspoon thyme, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Brown turkey, then transfer to a bowl and set aside.
3. Add sweet potatoes and bell pepper to skillet. Drizzle with 2 tablespoons olive oil and season with remaining 1 tablespoon garlic powder, 1 teaspoon thyme, 1 teaspoon parsley, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Toss to combine.
4. Place skillet in oven and cook about 15 minutes, or until sweet potato is mostly softened, stirring halfway through cook time.
5. Add turkey and spinach to skillet. Mix until well incorporated. Return to oven and cook 5 more minutes. Taste and season again with salt and pepper, if needed.
6. Sprinkle evenly with cheese. Broil on high for 4 minutes, or until cheese has browned.
7. Meanwhile, fry eggs to over easy or over medium (depending on preference) in a nonstick skillet. Once turkey and sweet potato skillet is out of the oven, top with eggs.
8. If desired, sprinkle with crushed red pepper. Serve immediately.
